Red Onion Tarte Tatin

Ingredients

  • 50-60 grams of butter

  • 1/4 cup of brown sugar

  • approximately 10 -12 small red onions peeled

  • 1-2 tbs balsamic vinegar

  • about 2tsp chopped thyme or rosemary

  • puff pastry cut to fit the pan with some overlap

  • a pan that can go in the oven, about 20cm wide

Recipe

  1. Melt the butter & sugar together until dissolved on a gentle heat

  2. Add the thyme or rosemary

  3. Season with salt and pepper

  4. Add onions as in picture

  5. Gently soften for about 30 minutes on the root end, and then repeat on the other end

  6. Arrange nicely and pack together... This will be the top side of the tart

  7. Add the balsamic vinegar about 5 mins before covering with the pastry

  8. Tuck the pastry in to keep it all snug

  9. Bake in the oven on 200c or 180c fan forced. For about 20 to 30 mins

  10. Allow to cool enough to handle before inverting onto a plate. Enjoy!

Tip: Keep the pastry cold before using
